Pumpkin Pecan Cobbler
This dessert is perfect for your holiday potlucks and family dinners with its warm flavours of clove, nutmeg and cinnamon. Think hot fudge pudding, except with pumpkin, spices, and pecans in a delicious sauce! Top with a scope of ice cream!
I came across this reciepe on Lauren’s Latest, and it has become a favourite fall and winter dessert. I have brought it to a few potlucks and have had many requests for it, so here it is!
I usually double the recipe
- 1 cup + 3 Tbsp of flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 cup pumpkin puree (not pie filling)
- 1/4 cup milk
- 1/4 cup melted butter
- 1 1/2 tsp vanilla
Topping:
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup pecans
- 1 1/2 cups boiling water
Preheat oven to 350 degrees
Mix together the flour, baking powder, salt, sugar and spices. Set aside.
Stir pumpkin, milk, melted butter and vanilla together to combine. Mix dry ingredients into the wet to create a thick batter. Pour into a greased 8″ casserole dish with high sides. If you are doubling the recipe use a small roaster.
In a separate bowl stir sugar, brown sugar and pecans together. Spread over the batter evenly. Pour hot water over everything without stirring. (This creates the delicious sauce).
Bake for 40 minutes or once the middle is set. I check the cake part with a tester to make sure it’s baked through.
Serve warm with a scoop of ice cream and enjoy! (Be prepared to hand out the recipe!)
