Easy One Pan Quesadillas
My family loves all mexican types of dishes, so this one was a hit! And it’s a hit with me if its a one pan wonder(or almost)! I came across this recipe on Pinterest as a recommendation from my sister. I changed a few of the ingredients to suit our tastes.
Easy One Pan Quesadillas
This easy to put together quesadilla will become a family favourite!
Ingredients
- 1 lb of ground beef
- 1 onion diced
- 1 bell pepper diced
- oil for sauteing
- 1 can of black or kidney beans
- 1 can of kernal corn
- handful of chopped green onion
- 8-9 flour tortillas
- 1 tsp garlic
- 1/2 cup salsa
- 1 1/2 tsp chili powder
- 1 1/2 tsp cumin
- 1 1/2 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- shredded cheddar or marble cheese
- Preheat oven to 400 ยบ
- Saute onion and pepper in oil. When veggies are done add burger and brown.
- Add garlic and drain excess fat if needed.
- Add corn, salsa, beans and spices and stir well
- Spray an 18 x 13 pan and arrange 7 of the tortillas to overlap as shown in the video
- Add beef mixture and spread out evenly
- Top with grated cheese and chopped green onion or chives
- Fold over tortillas to cover. Add another tortilla in the middle. Make sure the mixture is completely covered with tortilla
- Place another pan on top and lightly press down. This helps keep the quesadilla flattened and sealed.
- Bake for 20 minutes
- Remove the top pan and bake an additional 5 min if needed to golden.
- Allow quesadilla to cool slightly before cutting
- serve with sour cream and salsa
- Enjoy!
